White
- Terroir Although sun-drenched, the Talairan terroir offers remarkable freshness to white wines thanks to its highly draining limestone soils thatpreserve tension and minerality. The cool nights, enhanced by the altitude of the hillsides and the tramontane wind, allow the grapes to retain their natural acidity. The varied exposure of the plots promotes slow mauration, resulting in fine and vibrant aromatic profiles. This terroir produces luminous whites combine purity, freshness and Mediterranean elegance.

- Grape Varieties 70% Grenache blanc, 30% Vermintino
- Winemaking Night harvesting. Skin contact maceration in the press followed by direct pressing. Fermentation at low temperatures (between 15°C and 16°C). Short aging on lees with daily stirring.
- Tasting Notes The pale color with silvery highlights reveals beautiful brightness. The vibrant nose offers fine aromas of ripe citrus fruits and white flowers with great depth. On the palate, it is vibrant yet composed, offering dense and round texture supported by a long finish with a subtle saline touch.

Red
- Terroir Located in the North of the Corbières, this vineyard sits on the foothills of Alaric Mountain, reaching an altitude of 600 meters. The vines are surrounded by garrigue, with typical regional species such as kermes oak, boxwood, and juniper.

- Grape Varieties 60% Syrah, 40% Grenache
- Winemaking Parcel selection with harvest at optimal ripeness. The old plots of Carignan, Grenache, and Syrah are handpicked and primarily undergo carbonic maceration. The remaining Grenache and Syrah are destemmed and crushed. Traditional vinification occurs in concrete vats with temperature control, slow extraction, extended maceration, and malolactic fermentation.
- Tasting Notes The deep color with garnet reflections reveals impressive concentration. The intense nose offers aromas of ripe black fruits enhanced by spicy, minty, and warm notes. On the palate, it is full-bodied and indulgent with a balanced structure supported by a long-lasting aromatic finish
