- Appellation Pays d'Oc
- Grape varietal Syrah, Marselan, Grenache, Marselan, Carignan, Mourvèdre
- Tasting notes A deep red colour with purple hues. A delight of luxurious dark blueberries, liquorice, crushed pepper and the smell of garrigue, on the nose. A full and round mouth with a touch of vanilla and toasty flavours on the palate. The mouth is jammy and fruity. The attack remains fresh, and provides final notes of mocha.
- Pairing recommendation Ideal with duck (magret), beef carpaccio, local dishes of course (cassoulet, etc..), spicy or Mediterranean based dishes : tajine, moussaka, tika etc..
- Service temperature 16-18°C
- Winemaking process Traditional winemaking on a selection of ripe and mature grapes. The extraction method is slow and smooth, and the maceration lasts from 20 to 30 days.

Rosé




- Appellation Pays d'Oc
- Grape varietal Grenache, Syrah, Cinsault
- Tasting notes A pink peach like colour. A nose of vanilla and pomegranate with peach vine. A fruit-forward, generous and balanced mouth with a fresh and smooth final.
- Pairing recommendation Perfect with a swordfish tartar (or any other fish tartar, for that matter), a crumble of vegetables or a panacotta with red fruits.
- Service temperature 10°C
- Winemaking process Specific plot selection: 7 to 15 year-old vines with a yield management of 60 to 70hl/ha – Light skin-contact maceration, direct pressing, regular stirring to keep the lees in suspension. 10 to 15% of the blend is oaked macerated in order to bring balance and freshness

White




- Appellation Pays d'Oc
- Grape varietal Grenache, Marsanne, Viognier, Bourboulenc
- Tasting notes Beautiful yellow color, clear and brilliant. The nose evokes notes of ripe white flesh fruits and nuances of crème brulée and roasted hazelnuts. The greedy mouth reveals notes of Williams pears and apricot juice.
- Pairing recommendation Perfect as an accompaniment to risotto with tomato confit, a fish tagine, or on a fillet of poultry.
- Service temperature 9-10°C
- Winemaking process Plot selection, harvest at dawn to preserve the freshness of the grapes. Light skin-contact maceration. Pressing. Temperature controlled fermentation. Regular stirring to keep the lees in suspension. A part of the Cuvée will be aged in wood for 3 months to develop balance and body
